This position is located at Cabarrus Youth Development Center, a secure facility in Concord, N.C. (Cabarrus County), with an overall mission to provide committed juveniles with a safe, secure environment that fosters healthy decision-making and personal responsibility.
- Employee must have a specific knowledge of the Child Nutrition Program, State and Federal guidelines and regulations, and the Department's operational policies and procedures.
- Employee must accurately follow recipes, complete production record documentation, serve correct pre-portioned amount of food, follow federal traditional, enhanced meal pattern (serve the required food components (milk, bread, meat, fruit, vegetable).
- Employee must accurately assist supervisor with maintaining and completing required documentation for the HACCP Binders.
- Physical effort required will vary in frequency, however, normal cafeteria types of physical effort will be the majority of physical activity.
Must complete food safety certification or training class (take and pass ServSafe or equivalent exam or receive food safety training class).
Work Schedule:
This is a full-time position. Work hours for this position are Monday-Friday, 8am-5pm, however, candidates must be able to work on-call hours, weekends and holidays on a rotating basis and be able to work a variable work schedule to meet the needs of juveniles and their families.

To qualify for this position, applicants must demonstrate ALL of the following KSAs:
- Thorough knowledge of the cooking times and temperatures of various foods and methods of preserving their flavor, food value and safety.
- Thorough knowledge of the principles of personal and food sanitation and methods of maintaining standards in an institutional kitchen.
- Experience planning food for a large number of persons and to requisition needed food items.
- Experience planning effective work methods in food production and managing other foodservice staff and unskilled workers.
- Experience inspecting incoming fresh vegetables, fruits and meats to determine that they meet purchase order specifications.
Management Preference: These skills are not required but managers may choose to interview/select applicants who demonstrate Management Preferences.
- General Knowledge of Federal and State Laws and policies relating to the Federal Child Nutrition Program
- ServSafe Certification

High school or General Educational Development diploma and one year of experience in the preparation and serving of food in large quantities in a commercial or institutional kitchen;
OR
education and/or experience directly related to the job and consistent with accepted practices or the trade equivalent to two years of experience in a commercial and/or institutional kitchen.

Military Experience
