Recruitment Range: $31,200 - $36,400

HOURS FOR THIS POSITION ARE AS FOLLOWS: Monday - Friday 5:00AM to 3:30PM.

This position entails skilled work in preparing and cooking the majority or entirety of meals at the NC State Highway Patrol's Training Academy in Raleigh, NC. Work is performed in accordance with menus prepared and quantities provided by the dietary staff for each meal and requires skill in determining cooking times for various food items in order to complete all portions of the meal at the prescribed serving time. Work is reviewed by a supervisor to ensure that food is prepared safely according to schedule, and that food waste is minimal. The assigned work location is Raleigh, NC (Wake County).
Job responsibilities include the following :

  • Assisting in preparation of meals including starting the cooking process, observing food while cooking, following approved food handling techniques and sanitation requirements.
  • Removing foods at correct times for service.
  • Obtaining necessary ingredients for meal preparation and following standardized recipes to assure quality, quantity and nutritional value of foods.
  • Making salads, desserts and rolls.
  • Checking production schedules and correctly determining variety and quantity of food.
  • Planning for food preparation on a daily basis to have meals ready at serving time using menu requirements and number of customers; developing and modifying recipes or procedures as needed.
  • Reading menu to correctly estimate food requirements and checks supplies to determine that sufficient quantities of food are available for meals, including pulling meats from freezers to thaw in time for food preparation.
  • Following standardized recipes to assure quality, quantity, and nutritional value of foods using institutional kitchen techniques.
  • Preparing meats and vegetables by starting the cooking process, seasoning, observing food while cooking, adjusting temperatures to control cooking times, and removing foods when done following institutional kitchen techniques.
  • Assisting in serving food, cleaning of cafeteria line & cleaning of the kitchen area.
  • Cleaning cafeteria line, dining room, kitchen and equipment to maintain sanitary environment and preventing food borne illnesses; following health codes and approved methods for institutional kitchens.
This is a full-time position (40 hours per week) with State Benefits . The position works 4 days/week (10-hour shifts). Some weekend work and occasional holidays may be required.

The salary grade for this position is NC01. State employees are encouraged to apply for positions of interest even if the salary grade is the same as, or lower than, their current position. If selected for this position, a new salary will be recalculated taking into consideration the quantity of relevant education and experience, funding availability, and internal equity. Based upon these factors, a pay increase MAY result.

About the NC State Highway Patrol Training Academy :
The State Highway Patrol Training Academy is responsible for conducting Basic Law Enforcement Training Schools, Fast Track Basic Schools, Basic Telecommunicators Schools, Mandated In-Service Training, Specialized Training Courses such as Motor Carrier Training, Firearms, Defensive Tactics, Driver's Training, SMI Training, Mobile Field Force, Emergency Medical Training and training for civilian support personnel as well as First Line Supervisor Training. Additionally, the Training Academy arranges for and coordinates certain training and educational opportunities for members in out-of-state locations. A wide range of training programs is also offered to municipal, county, state and federal agencies both inside and outside North Carolina.

The Training Academy maintains the training records of the Patrol. Academy staff members attend seminars and training programs in order to stay abreast with the most modern and effective developments in law enforcement training. Training needs, analysis, research and course development are also essential elements of the training function.

To qualify for this position, applicants must document on the application that they possess ALL of the following :
  • Experience preparing and cooking food in large quantities.
  • Experience with safe food handling.
  • Experience using a variety of kitchen equipment (i.e. kettles, convection ovens, convection steamers, braising pans, mixer, food processors, slicers, deep fryers).
MANAGEMENT PREFERENCES :
  • Five years of experience in food preparation in a commercial and/or institutional setting.

Education and/or experience in food preparation that is directly related to the job and consistent with accepted practices of the trade equivalent to one year of experience in a commercial and/or institutional setting.
