Job Type: Full-time Job Description: Provide culinary direction to all areas of Syracuse University Food Service including but not limited to:residential, retail, athletic, catering, commissary, production kitchen and concessions. The successful candidate will bring novel, on-trend national and international concepts to the University. The candidate will understand flavors and the mechanics to create and teach programs that incorporate those flavors in both large- and small-scale environments. The candidate will have a broad worldview with an eye towards sustainability when creating menu concepts, utilizing locally sourced products when possible/available. The Executive Chef will provide education, guidance, and counsel to culinary and foodservice employees to ensure successful implementation of the department's culinary vision. Executive Chef will collaborate and support peers to develop, test, execute and assess ingredients, recipes, menus, programs and events. Qualifications: Minimum of five years of kitchen knowledge in food preparation, presentation, sourcing and purchasing. Experience in a high volume environment. Proven ability to train and lead a team. Degree in food service or culinary certificate from accredited school. Job Specific Qualifications: Must have a comprehensive understanding and ability to teach all skills related to cooking including (but not limited to) knife skills, cooking vegetables proteins and grains, sauces, all manner of culinary technique and understanding of world cuisine. Ability to plan menus that are interesting to the students and community of Syracuse University, healthy, sustainable and authentically representative of ethnic cuisines. Responsibilities: Provide culinary leadership, collaboration, supervision, and overall guidance to all food services and campus dining leaders to ensure recipes are followed and consistently meet quality, health/nutrition and financial targets. Train sous chefs, cooks, cook helpers, and other dining center staff in culinary techniques, cooking procedures, sanitation and safety. Work directly with staff to enhance preparation and presentation of food. Develop recipes that meet the needs of a diverse student population and are adaptable to a large volume operation. In addition to traditional American foods, the Executive chef must have a knowledge of vegan, vegetarian, international and religious cuisine. Work with Purchasing Agents and Vendors to ensure quality targets and budgets are met. Work with the Purchasing Agents and multiple vendors while ordering products to determine possible allergens. Work with the Dietitian to review/identify recipes for allergens. Fully responsible for menu planning and assisting with costing and brand management at all Food Services locations.
